Tachi is a 12-seat sushi counter inspired by Tokyo’s standing sushi bars and grounded in the traditions of Edomae sushi. The menu features thoughtfully curated nigiri sets alongside hand rolls offered à la carte, with to-go options available for those who want the same quality beyond the counter.

About our chef, victor chen

Originally from China and raised in Brooklyn, Victor Chen’s passion for sushi began at New York Sushi Ko, where he was first introduced to the Edomae tradition. Over the past 15 years, he has worked in both intimate, detail-driven counters and large international hospitality groups, gaining a breadth of experience that shaped his approach to the craft.

As Head Chef of Kintsugi, Victor spent five years guiding the restaurant through a post-pandemic transformation, defining its identity with a focus on precision and guest experience. At Nama in the Aman Hotel, he further refined his style, emphasizing restraint, seasonality, and storytelling through sushi.

With the opening of Tachi, Victor presents his vision of sushi: deeply rooted in Edomae tradition yet shaped by his own path, culture, and philosophy.
